Last Monday, Rhett and I were invited to a pot-luck of sorts at our friends Erica and Rob’s house with the promise of black bean burgers and white wine. I made this salad and these Caprese Skewers on a whim. It’s so amazing how, when given the task to put together a salad, you can feel wildly productive when making your own dressing and filling an oversized bowl with greens and olives. I can’t get enough of fresh vegetables this season, and since I’m always looking for new ways to incorporate vegetables into an afternoon snack or dinner party treat, these Caprese Skewers really hit the mark.Although I hadn’t signed up for “skewers” per se, I made sure to prepare this beautiful appetizer as an extension of my salad-maiden duties. There’s something so simple and easy about a skewered anything–simply pin ingredients together and plate for an easy, finger-food-friendly treat that’s ready to please a crowd.A variation worth noting: my friend Jessica loves to drizzle her Caprese Skewers with Balsamic Vinegar. The sweet and lightly acidic flavor makes for a lovely addition that brings vibrant summer produce to life. But, if you’re like me, tomatoes with the addition of basil and mozzarella seldom need anything. Balsamic Vinegar or no, these Caprese Skewers take salad duty to a whole new level.
Caprese Skewers
My version of this popular cocktail party recipe calls for a combination of colored tomatoes, basil, and fresh mozzarella balls. For another beautiful version of this dish, see this article on “Entertaining…[with] Caprese Skewers.“
Ingredients:
*1 lb. red cherry tomatoes
*1/2 lb. yellow cherry tomatoes
*1 bunch basil, washed and stemmed (keep leaves in tact)
*1 (8-ounce) package mozzarella balls
*balsamic vinegar, optional
SPECIAL EQUIPMENT NEEDED:
*knotted bamboo toothpicks
1.) Prep ingredients: wash tomatoes and remove basil leaves from stem. Set aside.
2.) Using party toothpicks (I like the knotted kind), skewer caprese dish in this order: red tomato, mozzarella, basil, yellow tomato, basil, mozzarella, red tomato. Plate and repeat until all ingredients are used up.
Makes 8-10 appetizer servings.
