While rummaging through the many recipes available at Closet Kitchen, I discovered this simple, tasty treat that combines very possibly three of my favorite ingredients: granola, yogurt, and fruit. Eat this recipe as a healthy, light, but filling breakfast, or power snack between meals. The Maple Pecan Granola gives the yogurt and fruit mixture a satisfying crunch whilst the honey, or maple syrup on top adds a dessert-like sweetness that is clearly delicious.
Raspberry, Blueberry, & Maple Pecan Granola Parfait
Use this simple parfait recipe with your choice of fruit, yogurt, or granola. Here, I used blueberries and raspberries, but really any berry or fruit will do. As for the yogurt, most parfaits are constructed with a bland (almost sour, non-sweet) Greek yogurt; feel free to use Greek yogurt or a flavored sweetened one. Ingredients:
* 1 cup vanilla yogurt
* 1 handful (or 1/2 cup) maple pecan granola
* 1/2 cup blueberries
* 1-2 tablespoons maple syrup, or honey
1.) Assemble parfait: add 1 cup vanilla yogurt to a dish, top with handful of granola followed by fruit. Drizzle with honey, or maple syrup.
