Nothing says, “hello” to Saturday morning than a simple, egg and bacon breakfast burrito with cheese. Lots of cheese.
I seldom eat something that isn’t yogurt or fruit for breakfast, but when I actually dare to branch out and enjoy other dishes, it’s almost always an egg breakfast containing my favorite ingredients:: eggs, bacon, and cheese. Recently, it occurred to me to place these ingredients on a warm flour tortilla and hallelujah! Praise the Baby Jesus! This Breakfast is sensational! Talk about a clearly delicious twist on the everyday egg-bacon-cheese trifecta.
Breakfast Burrito (with Eggs, Bacon, and Cheddar Cheese)
This recipe comes from nowhere in particular, but is a basic take on any breakfast trio–eggs, bacon, cheese–on a warm flour tortilla.
Ingredients:
* 2 eggs
* 3 slices of bacon
* 1/2 cup cheddar cheese, shredded
* 1 flour tortilla
1.) Begin by cooking the bacon: in a medium-sized non-stick skillet (on medium-high heat) add bacon to pan. Allow to cook until both sides are golden and bubbly. I prefer my bacon done, but a little chewy, but cook your bacon as long as you want!
2.) Meanwhile, in a medium-large skillet, add 1 tablespoon of olive oil and warm on medium heat. Add flour tortilla and toast on both sides (about 15-20 seconds each). Plate tortilla and sprinkle 1/2 cup cheese over tortilla.
3.) Add 1 tablespoon olive oil to the same pan use for the flour tortilla. Crack two eggs and cook sunny-side up until medium-well. Just like my bacon, I prefer my eggs to be done, but not “so done” that I can’t crack the yolk.
4.) Add cooked bacon to flour tortilla and cheese and top with 2 cooked eggs. You can wrap the tortilla and eat like a regular burrito, or use a fork and knife to cut individual pieces.
Makes 1 breakfast burrito. Enjoy!
