As summer wraps up, my home garden is yielding an enormous amount of cucumbers. Practically every day, I walk outside to find a new one hanging from a vine and ready to be picked.
Being the veggie-loving girl that I am, I can eat…a lot of cucumbers. Fortunately, there are tons of ways to use them–pickling, salad, appetizers with hummus, or this recipe, a light, healthy cucumber salad. Toss fresh cucumbers with dill, vinegar, and enjoy as a healthy snack or summer side dish.
Cucumber Salad
This variation of Cucumber Salad comes from my favorite food blogger, Elise Bauer over at Simply Recipes. You can find her version here.
Ingredients:
* 2 large cucumbers, ends removed, peeled, and cut into 1/2 in circular rounds
* 2 tablespoons fresh dill
* 3 tablespoons rice wine vinegar
* Salt & Pepper, to taste
1.) Begin by gathering cucumbers.
2.) Peel cucumber and remove ends. Cut into circular rounds that are 1/4-1/2 inch thick.
3.) Cut rounds in half and add to a medium-size bowl.
4.) Add dil, rice wine vinegar and salt and pepper to the cucumbers. Toss and taste. Adjust salt and pepper according to personal preference.
5.) Plate and serve. Enjoy! Makes 4 servings.
