I was thrilled to have the chance to join the LOTRO Stream team this past Sunday to remake this Honeycomb Cake players can acquire in-game. This recipe is inspired by the Midsummer Housing Item, Honey-Cake Comb, and uses a hefty amount of honey–1.25 cups!
I’ve added the slight hint of lavender as an homage to Arwen’s beautiful Midsummer Festival Gown.
Midsummer Honeycomb Cake
Ingredients:
- ¾ cup butter, softened
- 1 ¼ cup honey
- 2 Tbl. brown sugar
- 1 tsp. vanilla extract
- 2 eggs
- 1 ½ tsp. baking powder
- ½ tsp. salt
- 2 ½ cups flour, sifted
- 1 ½ cup milk
- 1 Tbl. + 1 tsp. Lavender, for steeping
- 1 Tbl. corn starch, optional
Special Equipment:
- Honeycomb Cake Pan (metal version; silicone version)
- Preheat oven to 350F. Heavily butter honeycomb cake pan.
- Using a standing mixer, blend butter until smooth (about 3-5 minutes on a low setting).
- Add honey and sugar and mix well. Mix in vanilla and eggs.
- Sift flour and mix dry ingredients with a whisk.
- Simmer milk and steep lavender for 3-5 minutes. Taste milk to make sure the flavor is present but not overpowering.
- Combine ingredients: mix ⅓ wet mixture with ⅓ dry mixture; add ⅓ milk and stir to combine, mixing well. Repeat two times until batter is fully incorporated. If batter is too thin, add 1 tablespoon corn starch.
- Bake for 45 minutes or until a toothpick inserted into the middle comes out clean.
- Cool for 5-10 minutes before turning out on a plate. Important: loosen the cake with a knife around the edges before transferring it to a plate.
