This quick and easy barley bread uses a combination of dry ingredients–bread flour, salt, and activated yeast–and wet ingredients–a barley mash made on the stovetop. Inspired by the Apprentice Cook’s recipe, Barley Bread, from The Lord of the Rings Online, this recipe makes a hearty, rustic loaf.
Barley Bread
This recipe for Barley Bread is inspired by the Apprentice Cook's Recipe, "Barley Bread," from The Lord of the Rings Online. There are many ways to incorporate barley into a white bread recipe, either as a flour or a mash. Here, we use a mash.
Ingredients
- -1/2 cup barley grains, cooked in 1-1.5 cups water
- -1 Tbl. honey
- -1 cup water
- -1 tsp. active dry yeast
- -3 cups bread flour
- -1/2 tsp. kosher salt
- Special Equipment Needed:
- -8-1/2 x 4-1/2 x 2-1/2 in. loaf pan
Instructions
Cook barley like rice (about 12-13 minutes over medium heat), stirring regularly so as not to scorch the bottom of the grains. Set aside and cool to room temperature.
In a large mixing bowl, or a Kitchenaid mixer with a dough hook, mix honey and water until combined. Add yeast and wait until foamy (about 5 minutes).
Add bread flour, salt, and cooked barley. Mix until dough just comes together. Cover dough and rest until dough has doubled in size.
Turn dough out on a lightly floured work surface. Shape into a log and transfer to a 8-1/2 x 4-1/2 x 2-1/2 in. loaf pan.
Preheat oven to 350F. Bake for 45 minutes or until a thermometer reads 190F.
Transfer bread to a cooling rack and rest until it reaches room temperature. Cut into slices.
