J U N E –AU G U S T
Some of my favorite Louisiana produce items are the fruits and vegetables readily available during the summer months. Beginning with early June through the month of August, bright red and yellow peppers, ripe avocados, fresh corn, and tender eggplant fill the edges of my plates and the recipes on the following pages. Summer is a great time for yellow squash, zucchini, and those infrequent pints of blackberries and blueberries usually only cultivated at their peak during the months of May and June. For the spices of summer, basil and cilantro grow best in Louisiana’s hot summer days (as long as they have lots of sun), while crawfish, prosciutto, sausage, and sirloin take the cooking outdoors and onto the grill.
